Loved overs – Turkey Breast

My parents are visiting for an extended weekend. I recently had shoulder surgery and I am pretty sure Mr. U. Is exhausted from working and taking care of me all of the time. What to do to feed my family and make life easier for those who are preparing food and cleaning up (Read: not me)? Turkey breast (bone-in, 7 pounds) in the oven the night they arrive! Simple meal with turkey, roasted potatoes and green beans last night. Dad had some Loved Over roasted potatoes with his breakfast omelette and we had turkey Loved Overs for dinner tonight.

For lunch today, Mr. U. made a very simple couscous salad under my direction. He liked it so much that he had me photograph it for the blog, so I will post the recipe and photo tomorrow.

It’s the weekend! Cook a bit ahead, relax, have a drink on the screened porch, and engage in a real conversation with someone you whose company you genuinely enjoy.

There. Doesn’t that feel better?
